Seven Sisters Grape Spirit No.1 2018

We’ve had this up our sleeve for a couple of years. We use it as a base for our gin and brandy, and to fortify our vermouth, and we found using a state-of-the-art pot and column hybrid still that we could be really accurate with the flavours and what we’ve come up with is superb. You treat it like a fine whisky, you can drink it neat (and we love it like that) but it has such fantastic depth and complexity in its fruit flavours that you can use it as a base for an interesting twist in most classic cocktails or take your brown and stirred drinks to another level with 10ml on the end to get a burst of something unique.

About our GRAPE SPIRIT NO.1 2018

The first two pressings of our grapes are blended to create our celebrated Rathfinny Sussex Sparkling wine. We then make a unique still wine from the third pressing of these grapes, the Rebêche. Our 2018 base wine, made from the third pressing of 56% Pinot Noir, 32% Chardonnay and 12% Pinot Meunier, is distilled in a 1,800L copper pot still, from 12% to 27% abv. This is pot-distilled a second time to 74% abv, then diluted down to 48%.

Tasting Note & Perfect Serve

Caramelised apricot notes entice on the nose, leading to a rich palate of ripe cherry and star anise, and a lifted, apple-blossom finish. Enjoy poured over ice, with tonic or as an accompaniment to a range of exciting cocktails, such as a Sussex Sour.
