Seven Sisters Gin 2018
The first two pressings of our grapes are blended to create our celebrated Rathfinny Sussex Sparkling wine. We then make a unique still wine from the third pressing of these grapes, the Rebêche, and this forms the basis of our spirit range. This neutral grape spirit, with fruit notes and a full, rounded mouth-feel, is then blended with grain neutral spirit, made from wheat, at a ratio of 30:70. It is then macerated with our carefully selected and hand-weighed botanicals for a defined length of time and then distilled in the 1,800 litre copper still which further enhances the flavours.

WHAT IS LONDON DRY GIN?
In short, it denotes a superior quality of gin. It harks back to the gin craze of the 1900’s in which London distillers adopted the Coffey Still, ending the craze of sweetened gins by producing a dry, botanical-infused spirit. ‘London Dry’ refers to the production method rather than the location – it can be made anywhere in the world. It works to a complicated set of regulations; including a minimum alcohol content of 37.5% abv and allows no artificial ingredients or colourings.
TASTING NOTE & PERFECT SERVE
Lifted citrus notes of lemon verbena, pear and quince, over heady aromas of cherry blossom and wild lavender. Creamy nuances of lemon meringue and key lime pie give way to palate-cleansing notes of pear skin and fennel with a sweet cedar-wood flourish on the finish.
